A suite honey that doesn't crystallize

What is the asphodel honey and why it gave the name to Asphodel community

Asphodel honey is a monoflora honey that is obtained from the nectar of the asphodel flower.

This plant gave the name to our community because is a very resistant flower that has a particular force, blooming during the coldest months of the year and being present also in very tough lands with rocks and stiff soils. It is also the plant of Saint Joseph: the legend say that he had this plant in the hands when Mary was assigned to him and when the announcement was made of his marriage with Mary the flower suddenly bloomed in all its beauty. This represent for us the kind of a miracle that we are trying to do, putting together a bunch of beekeepers with the dream of producing only natural and healthy products starting from the bees health to arrive to the world’s table with a unique product.

It has a rather delicate, fine taste and for this reason it is excellent when paired with fruits, perhaps to accompany fruit salads and in many cases it is really delicious when combined with cheeses with a not too strong taste.

For those who like to dare a little more you could try to combine it with fish, while for lovers of classic flavors and not too sought, a combination that is never denied is with yogurt, maybe goat.

This refined honey takes its name from the plant from which it comes: it is a monoflower plant native to Sardinia that blooms in February/march and is essential for bees feed after the winter block: having a good asphodel season means a lot for an organic and natural beekeeper like the Asphodel community ones because it helps to start the season with a lot of energy for their bees.

The asphodel plant is a herbaceous and rustic plant, known for being part of the Liliaceae family, originating in particular in the area of Barbagia but well spread all over Sardinia: considered by local shepherds like a disturbing plant for the sheeps, it is instead a precious reserve for beekeepers that desperately search for it every season: the location of this plant can in fact change every year, this making the beekeepers life harder than normal.

Asphodel stem is mainly woody in nature and the shape of its flowers is very reminiscent of spikes or panicles; almost always white, at the center of the flower there is a yellow or orange area: its flowers at some times of the year may be somewhat reminiscent of those of the daffodil. Once the flowering period is over, in their place, some particular green fruits show up that after some weeks become black.

Properties and how asphodel honey is obtained

From the asphodel plant can be obtained honey also in a rather simple and homemade way, like we normally do: our honey in fact is a raw honey, no process is entailed nor pastorization, this making our asphodel honey a pure product coming from bees: the fundamental ingredient is only a little patience, that we have to use when bees are changing the flowers because we need to retrieve the honeycombs from the beehives and take the honey out promptly to avoid any mixing with other nectars. This is a tough job but is required to avoid not having a pure asphodel honey.

The color of asphodel honey is very clear, crystalline, delicate taste and extremely sweet and doesn’t crystallize: this is a specific characteristic of this honey which is quite unique in the Sardinian honeys panorama.

This honey will catch your palate with its scent, sweet and citrus flavors at the same time. It is a blend of scents that recall the sweet of vanilla and citrus like orange, all surrounded by a fantastic note of almond flowers.

This wonderful product, in addition to being very good is also a valuable ally for health like all the organic honeys coming from uncontaminated soils: already many centuries ago the Arabs for example used it to treat scabies and ulcers.

An ally for many health issues

In general we can say that this product can have many healthy properties such us:

Energy restorative: this product is great for recovering energy after an influenza for example or after fighting a virus, because it contains a high percentage of minerals and vitamins. This is why it is particularly useful in winter to prevent soar throats.

Calming and antispasmodic: among the various benefits that derive from taking this nectar, there are also those that it causes on the central and peripheral nervous system. This is due to its calming action of nervous tensions, acting in some cases also as antispasmodic.

Detoxifying: this honey is also a valid ally of the liver. In fact, it is a good detoxifying agent that helps the liver to eliminate heavy and harmful substances for the body.

Antibacterial: like many types of honey also that of asphodel has this property, you can try for example to put a little over an inflamed area and see its beneficial effects. It can also help in cases of acne and psoriasis.

Healing and decongestant: this honey helps a lot in the stages of healing and as an emollient or soothing of reddened areas. Try to believe!

So why asphodel honey is so little known since it has so many beneficial properties? Because it is a product that comes from a free and wild plant, difficult to produce and to find in the market but definitely it is worth it.
