Our wild honeys

We produce only what nature gives us the chance to produce. We have no guarantees of quantities nor type of honey we can produce but we have one certainty: it will be the best and healthiest we can give to you.

CORBEZZOLO HONEY

Corbezzolo  (Arbutus Unedo) is the major source of the finest bitter honey while Sardinia is the world-leading producer, thanks to the broad expanse of Mediterranean scrub. Nectar is collected by bees in wintertime (October-January).

Corbezzolo honey, also known as arbutus or strawberry tree bitter honey, fits best in our concept of healing products due to its bitter taste. It’s something deeply rooted in our subconscious that if it’s sweet and pleasant is not healing. Medicine is supposed to be bitter and hard to take. We have to suffer to be healed.

This  is a rare type of honey and though there are beekeepers who make it because of its unique bitter taste.

Good and healthy

On fresh ricotta or fresh cheeses with nuts for tapping. Also, this is the best honey to taste with the typical product of Sardinia called Seadas, a crispy dessert with cheese inside.

It is amber in a liquid state and from hazel to light brown when crystallized.

Ideal honey for breakfast, brunch and dessert in particular with coffee for people who don't lile the suitness of sugar on it.

Heatlhy and preventative

Despite its taste, corbezzolo honey has all the other honey’s health benefits. It can still be used for immunity, respiratory diseases, wounds and burns, cardiovascular conditions and digestive issues.

It has its particularities, which has now made it famous in the world. In Sardinia, Italy, people are more aware of its preventive use and therefore its price is up to 7/8 times higher than for traditional honey.

THISTLE HONEY

It is a very fine variety of honey, highly appreciated for both its taste and health benefits.

Is produced in early spring thanks to the flowers of white wild thistle that is a typica plant of the sardinian country side. Its strong taste makes it one of the most appreciated honeys of the collection.

Thistle honey from Sardinia has been recognized by the Slow Foods Ark of Taste as a unique, small production product worthy of recognition and distinction and it's produced all over Sardinia.

Sardinian thistle honey is not only a delicacy but also a great food for good health, provided, of course, it is not processed, heated, diluted or faked, in which case it loses its beneficial properties. WILD BRAMBLE HONEY

Bramble honey is rare and creamy, with long-lasting notes Produced mainly in the first two weeks of june   is is distinguished by warm and fine blackberry notes.

Bramble honey is extremely rare and symbolizes the wilderness of nature. With a creamy texture, it is characterized by warm and sweet blackberry notes, which mix refinement and aromatic persistence. Its woody scents combined with a warm and powerful flavour make it enjoyable without moderation. Its subtle and long-lasting taste is incomparable.

AMURA is a great substitute for sugar in hot drinks, and particularly in teas. Among creamy honey, it is the most appropriate for teas thanks to its sweetness and warm blackberry notes. Perfect for a well-deserved tea time break.

WILD EUCALYPTUS HONEY

Eucalyptus is one of the most popular essential oils used in aromatherapy diffusers to enhance relaxation.

Anyone who’s ever smelled eucalyptus has a definite feeling about its aroma. Some find it relaxing, refreshing or stimulating. Others think it smells like every icky concoction their mother rubbed onto them when they had a cold.

To a lesser degree, that sums up the feelings of people who’ve tried eucalyptus honey. Some love its relatively-strong taste and pungent aroma. Others think it smells and tastes nasty.

There can be no doubt, though, that eucalyptus honey’s bold taste adds a unique flavour to foods when used for cooking or served directly from the jar – and is particularly useful honey when it comes to health benefits.

Good and healthy

Unlike most honey varieties, eucalyptus honey contributes more than just sweetness when used in the kitchen. It can be added as a sweetener for tea, of course, but it will add its rich flavour instead of simply replacing sugar.

Similarly, eucalyptus can be drizzled over a wide range of foods, but will change the overall nature of their flavour; good choices to match with this honey are grilled fruit and blue cheese, and it will add a notable tang to salad dressings and marinades.

Eucalyptus honey can also be used in cooking or baking, but its distinctive flavour may alter the taste you expect from the finished product. One final suggestion: it’s great honey for brewing mead.

Healthy and preventative

Raw eucalyptus honey contains vitamin C and vitamin B9  and that’s its primary nutritional benefit since it’s quite low in essential vitamins and minerals. A single tablespoon contains 17 grams of carbohydrates from sugar and 60 calories, making it food that should be eaten in moderation and not for its nutritional benefits.

As with many kinds of honey, eucalyptus honey produces good results when applied topically for treating and healing wounds, including cuts and burns, thanks to its antiseptic and antibacterial action.

MEDITERRANEAN BUSH HONEY

Mediterranean bush honey is the millefiori honey typical of the mountainous areas of Sardinia. Here, the wildflowers of Erica Arborea, Lavandula, Asphodel, Cistus, Rosemary and a large number of wild thistles create an ever-changing and intriguing mix. Its flavour changes from year to year, but it is always linked to a certain aroma, which allows it to be recognised among the numerous species of millefiori from other areas and countries.

The resulting blend is unmatched for its rich, spicy aroma; if the honey is richer in Lavandula, it will have a softer flavour and a balsamic aroma. If heather or thistle predominates in the wildflowers, the flavour will be richer and the aroma spicier.

Good and healthy

Mediterranean bush honey is incredibly versatile and capable of accompanying the most varied dishes, depending on the characteristics of the season. It has an amber colour, varying from light to dark depending on the area where it is gathered. Very nutritious, it has a detoxifying and restorative action.

On fresh cheese or brie type cheese combined with pear jam. Excellent with curry and balsamic vinegar to season grilled meat. Pair it with medium-aged cheeses, traditional Sardinian desserts and more.

Healthy and preventative

High in minerals and antioxidants, it is an excellent ally against flu and to soothe coughs.

Wildflower honey is also useful because it stimulates the intestine and digestive system and it is a good anti-bacterial as well.

WILD LAVENDER HONEY

Lavender (Lavandula) is an aromatic plant in the mint family that comprises several dozens of different varieties used primarily for the production of the fragrant lavender oil, but also for ornamental purposes.

However, lavender flowers are also a source of food for honey bees and their nectar is used to make lavender honey.

Lavender honey is a delicate, aromatic monofloral variety of honey with multiple beneficial health effects.

Good and healthy

Lavender Honey has a floral, well-rounded flavour. A premium monofloral (or single flower) honey, it has a polished honey aroma and perhaps the delicate floral scent of Lavender.

An extraordinary sweetener, Lavender Honey is known for its low acidity and lack of bitterness. Its colour ranges from white to light amber.

Lavender Honey may lightly crystallize in your pantry, developing very fine granules. The exquisite monofloral honey is delicious served over mild, salty cheeses like Feta and Ricotta Salata, and also pairs well with blue cheeses and triple cremes.

Healthy and preventative

Overall, lavender honey is a wonderful variety of honey with rich colour, moderately sweet taste and delicate fragrance.

It’s nutritious and energizing, great for skincare however, such properties and benefits are only present in the raw honey, unaltered by processing and heating that may deprive it of all its beneficial compounds.

WILD WHITE ASPHODEL HONEY

Sardinia is the area where you can most easily find the Asphodel plant, which is the first to bloom in late winter and is an invaluable resource for bees to restart after the cold of winter.

The honey produced by this wild plant is
recognizable because it possesses a much lighter color than other honeys, almost crystal clear and that's the reason why is also known as the White Honey!

As for the flavor, it is very delicate and refined, but at the same time sweet and intense, with a vanilla

aftertaste with a sour tone. The aroma is reminiscent of the citrus tones of almond blossoms.

Good and healthy

In Sardinia this honey is widely used in cooking, particularly in desserts.

It can also be used to dress fruit salads or combined with fish dishes or mild-tasting cheeses, as well as with herbal teas and infusions, spoon

desserts or yogurt.

Healthy and preventative

Sardinian Asphodel honey acts as an energy restorative due to the presence of mineral salts. It also acts as a calming effect.
